These years at the Iberostar Hotel were invaluable for Big Wayne, as they allowed him to develop his culinary skills, learn from experienced chefs, and gain a deep understanding of professional kitchen operations.

In 2020, Big Wayne decided to take the next step in his culinary journey by starting his own private cooking business. This venture allowed him to share his passion for Jamaican cuisine with a wider audience and create unique dining experiences for his clients. Three years later, in 2023, Big Wayne made a life-changing decision to immigrate to Buffalo, NY. It was here that he finally realized his dream of opening his own restaurant, aptly named Chef Bigwayne Jamaican Cuisine.
